Black tea and its properties
Tea leaves contain more than 2000 chemicals, including many polyphenols. However, the content of micronutrients in the beverage can vary widely. It depends, among other things, on the soil and climatic conditions in which the tea tree is grown and on the way the collected leaves are processed. In unfermented green tea, for example, there are catechins which give the tea its characteristic bitterish aftertaste. Catechins are almost non-existent in black tea, as during the fermentation process other chemical compounds are formed from catechins.
Tannin (tannic acid), known for its anti-inflammatory and antibacterial properties, is also present in tea. High content of alkaloids, mainly caffeine, stimulates the nervous system and speeds up the body’s metabolism. Caffeine also has diuretic properties. Substances contained in tea, especially flavoured tea, improve digestion because they accelerate the process of lipid decomposition. Theophylline contained in tea is used to treat respiratory diseases, such as asthma. The broth from tea tree leaves is a source of vitamins, mainly A, C, E, K and some of the B vitamins. It also helps smokers to fight nicotine addiction.
In addition to its advantages, amateurs of the Chinese beverage can also experience its adverse effects. Consuming too much tea can lead to a dangerous increase in gastric acid secretion, which contributes to irritation and indigestion or constipation.
Drinking very strong tea in the evening results in problems with falling asleep. In some people drinking strong broth has a negative impact on the cardiovascular system, causes reduced lactation in nursing mothers, or even changes the color of teeth. In addition, tea drunk in large quantities inhibits the process of assimilation of iron by the body.
However, you should not be afraid of the negative effects of drinking your favourite drink. If we do this in moderation, the health and sensory benefits definitely outweigh any problems.
How to brew good tea?
First step: water to good tea
To рroste – to make tea tastier, do not boil boiled water anymore, only every time you cook fresh. Because every cooking decreases the oxygenation of water, the taste of tea from boiled water is worse. Don’t believe it? Try it!

Third step: tea brewing

Method of brewing black tea
Pour one teaspoonful (approx. 2.5-3g) of this tea into a cup (200-250ml) and pour almost boiling water, i.e. approx. 95C (water just boiled in an electric kettle is suitable just in time). What is important (and this in brewing all kinds of tea) – we steam it in a jug, which we have to heat up, preferably rinsing it with boiling water before pouring tea. Black tea brewing 3-5 minutes – 3-minute tea is stimulated, 5-minute tea calms down.
How to serve the tea
Even the hottest tea will taste only as good as you serve it. Not without a reason in Asia whole сeremonies of tea brewing are organised – even the most excussive mixture will not taste, if you brew it in an old cup with an ear and a worn out advertisement of some firmу on the side.
Get an elegant tea set. Not infinitely even old-fashioned ones – cups and saucers break really easily – but solid kettle and several coloured cup will be ok. Tea from an elegant cup is a really good tea.
